Skinny Taste does it again! I'm an Italian food junkie so I'm always
trying to find healthier alternatives to the seemingly "heavy" food
group. I found different versions of this recipe on Gina's site and
decide to try this classic "Spinach alla Parmigiana" version. I didn't have 3 oz. chicken cutlets
on hand so I cut regular chicken breasts down in thinner smaller pieces.
I was also a little weary of the skim version of ricotta cheese -
there's just some things you can't do fat free/less fat (cough cough,
cream cheese - hate that!). But all ended well (I made it last night) and it was SOOO delicious
and definitely hit my Italian food spot!
