Pumpkin Pancakes
Halloween might be over, but pumpkin recipes are not! I found this Pumpkin Chocolate Chip Pancakes recipe on one of my go-to food blogs - A Cozy Kitchen. I decided, with all the pumpkin in our house, to make a revised version for breakfast two Fridays ago after Shayne had surgery - since we were both home. Unfortunately, I didn't have any chocolate chips in the house but I will add them the next time because this recipe is a keeper. I threw in a little more pumpkin than the recipe called for (to make sure a strong pumpkin flavor was there), some pecans, and decided to use whole wheat flour instead of all-purpose. I also left out the cloves and ginger; I personally think they can overcome the taste too much. I must say, although the chocolate would've been a great addition, my edited recipe worked out pretty good. To make up for the lost chocolate I added a little bit of nutella to mine! If you're as much of a pumpkin lover as me, this should definitely be on your weekend breakfast list.
