For some reason I only tend to be in the mood for breakfast on weekends. I say "for some reason" like I don't already know that it's because I get to sleep in and I'm not rushing to get out the door at 7 AM like I am during the week. I'd rather sleep an extra 15 minutes then drag myself out of bed to eat a full breakfast so I opt for fruit cups and toast on my way out the door. Nevertheless, Shayne is an early riser and an amazing cook so he usually gets up before me on the weekends to make us breakfast! The first "favorite" is something he whipped up himself: Peanut Butter & Banana French Toast - he's very good at being imaginative in the kitchen, while I would rather follow every step-by-step instruction printed on a recipe card or website. Follow your standard french toast recipe, and when you're done take two pieces and coat them with peanut butter and banana slices and put them together like a sandwich! I topped mine with some maple syrup as well. My second breakfast favorite is crepes which I like to make when people are visiting us because the batter makes a lot and who doesn't love cool whip, nutella, bananas and strawberries?! I was always intimidated to make them, but if you're paying close attention to them while they cook it's really easy. One of my best friends Joel passed along this recipe- it's easy to follow and produces a delicious end result! And you can top your crepes with whatever you like!
Crepes:
3 eggs
2 cups whole milk
1 cup flour
1/2 teaspoon salt
1 tablespoon safflower oil or melted butter (I use butter)
1 teaspoon of vanilla
Blend all ingredients in a blender until there are NO flour lumps! Refrigerate for at least an hour or you can prepare the batter and refrigerate overnight. Heat a small skillet with butter until hot. Pour enough batter in the pan to create a very thin (translucent) layer that covers the bottom. Cook until the batter no longer runs and flip. Cook on other side until the crepe starts to bubble. The color will stay pretty flat and neutral! Top with all your favorites!

Both look delicious... If you use skim or 2% milk for the crepes will it make a difference?
ReplyDeleteNope, I don't think so! I usually have 1 or 2% milk in my fridge so that's most likely what I used! :)
